Two of Greece’s most iconic grape varieties come together to create an exceptionally enjoyable and unique organic rosé wine, produced in limited quantities. The white Assyrtiko and the red Xinomavro, blended at a 60/40 ratio, ferment with indigenous yeasts and mature for a few months in 500-liter oak barrels, with the presence of fine lees. The aroma is intense yet elegant, combining the distinct characteristics of both varieties.
Organoleptic Characteristics:
It has a light pink color with an orange hue. The glass is filled with aromas of strawberry, cherry, orange, and pear, along with some mineral notes. On the palate, it is relatively rich with a crisp acidity. The flavors of red fruits dominate, and the aftertaste is persistent. This is one of those rosé wines that could age beautifully for 2-3 years in the bottle.
Pairings:
It pairs perfectly with cooked legumes, pizza, roasted pork with baby potatoes, pasta with light red sauces, chicken with spicy Indian sauces, spicy sushi, grilled small to medium-sized fish, and marinara pasta. Serve at 8-10°C.
