Assyrtiko is a variety known for its origin from Santorini, yet it is successfully cultivated throughout Greece. This is a distinctive variety, renowned for its high acidity and volcanic character, making it ideal for a Greek summer. Our Assyrtiko is cultivated in the Alepotrypa vineyard. This particular vineyard was covered by the sea many years ago, which explains the salty character of our unique Assyrtiko.
Organoleptic Characteristics:
In the Alepotrypa vineyard, the powerful Assyrtiko variety reveals an exceptionally attractive character. The wine has a bright pale yellow color. It presents a subtle aromatic bouquet of citrus fruits, with notes of white flowers and, of course, the characteristic minerality of the variety. On the palate, the wine is rich with crisp acidity, and the finish is long and enjoyable.
Pairings:
It pairs excellently with dishes of rich character, such as grilled fish, swordfish, and shellfish. The combination with sushi and other dishes of Asian cuisine is particularly interesting. Best served at 8°C.
