Giannis Papargyriou has crafted a long-aging red wine, primarily based on Merlot (95%) with an additional 5% of Cabernet Franc. This wine has been aged for 18 months in barrel and bottled in 2,170 bottles using Diam 30 corks. It promises unforgettable tasting experiences even after 30 years, designed by the producer to live and evolve for the next 40-50 years.
Organoleptic Characteristics:
The Emperor pours a deep, impenetrable purple color with violet hues. Although its nose is still youthful, after some aeration, it becomes expressive and multi-layered, highlighting ripe black and red fruits, with crème de cassis, plum, pomegranate, and raspberry standing out. Floral aromas of violet and herbal notes of sage add depth, while oak contributes hints of licorice and high-quality dark chocolate. Iodine and ink complete the aromatic profile. On the palate, the wine is full-bodied and powerful, with high acidity balancing the warmth of alcohol and the youthful, well-crafted, juicy tannins. The flavor profile is built on the richness of fruit, which reappears in a fresher, juicier form, enriched with floral and herbal notes that confirm the nose. The oak’s chocolatey texture leads to a long and persistent fruity finish.
Pairings:
It pairs excellently with grilled red meats, game, large poultry such as duck, turkey, and guinea fowl, as well as mature crusted cheeses (like camembert, brie), aged and spicy cheeses. Serve at 16-18°C.
