In 1897, Orazio Nonino founded his own distillery in Ronchi di Pavia. In 1933, the distillery was relocated from Ronchi to Percoto. There, the Nonino family introduced their “Aquavitae Optima,” an experiment that led to the creation of Monovitigno (single variety) Grappa. This is the oldest and most traditional spirit of Northern Italy, produced from the distillation of Chardonnay grape pomace. It has been aged in small oak barrels for 12 months.
