The copper still takes on its dominant role once again. The distiller carefully cuts the “head” and the “tail” of the distillate, choosing to keep only the “heart.” His goal is to infuse the tsipouro with the fruity yet bold character of the grape, capturing the essence of the region’s cold and warm climate, and to impart the aroma of the waters of Mount Olympus and the scents of the Thessalian plain. This tsipouro must become as clear as the pure thoughts of the heart.
