Organoleptic Characteristics:

It features a medium lemon color with pronounced notes of grapefruit, peach, butter, citrus, honeysuckle, and orange, set against a mineral backdrop of smoke and flint. The island’s mineral imprint is prominent. It has a dense structure, rich body, high acidity, and high concentration. It evolves with each sip, revealing its personality and impressing everyone who tastes it. Notes of bitter orange, grapefruit, ripe peach, nectarine, citrus, bergamot, and honeycomb blend with hints of wet stone, toasted sourdough bread, and smoke.

Pairings:

Pairs wonderfully with fatty grilled fish, linguine with clams and bottarga, or lamb with herbs in a wood-fired oven. Serve at 11°C.
