This is one of the most beloved labels produced on the island. If you taste it with your eyes closed, you’re likely to feel the salty breeze of the Aegean and the wild beauty of the wind-swept vineyards of Santorini. Even the “simplest” label from the Hatzidakis winery, made from 100% Assyrtiko, is a grand wine that can age for many years.
Organoleptic Characteristics:
The wine has a light lemon color. Its aroma is elegant, dominated by citrus fruits like lemon and bergamot, with mineral notes reminiscent of flint and hints of apricot. It is rich and refreshing on the palate, with pronounced acidity and a long lemony finish. This is certainly a wine that could evolve and develop a complex character over at least a decade.
Pairings:
It pairs beautifully with anything from the sea, whether raw or cooked, dishes with eggplant, pork in white sauce, lemony lamb stew, and charcoal-grilled chicken with plenty of lemon. Serve at 12-14˚C.
