He was undoubtedly one of the greatest Greek winemakers. A true wine genius with boundless talent, a visionary who revolutionized the approach of Greece’s most significant wine region, placing it emphatically on the global wine map.
Organoleptic Characteristics:
Deep lemon color with golden highlights. Aromas of moderate intensity and great complexity on the nose, with the impressive concentration of the fruit and the characteristic Assyrtiko profile taking center stage. Ripe yet refreshing citrus aromas, orange blossom, citron, quince, bitter orange, and grapefruit, accompanied by notes of honeycomb and honey, blend harmoniously with vanilla and hints of toasted bread from the extended lees aging. The minerality is clear, lively, and expressed with aromas of wet stone and flint. Rich, bold, with an almost tannic structure and sharp acidity that adds vibrancy and balances the wine’s richness. Butter, sweet lemon, quince, bitter orange, and vanilla stand out, with remarkable concentration, lingering in the impressively long mineral finish.
Pairings:
Perfectly complements large grilled fish, seafood risotto, or pasta with grouper. Serve at 8°C.
