The 2016 vintage was the last under the supervision of the great Greek oenologist and winemaker, Haridimos Hatzidakis.
Organoleptic Characteristics:
It has a deep lemon color with intense golden highlights. On the nose, there are oxidative notes and ripe aromas of yellow fruits like quince and dried fruits. It stands out for its salinity and mineral notes. Rich and complex, with aromas reminiscent of ginger, tea, and chamomile. On the palate, it is dry with mineral notes, high alcohol that is perfectly balanced by the high acidity that Assyrtiko brings in Santorini. The palate is dominated by flavors of ripe yellow fruits, ginger, and chamomile, with a long and enjoyable finish. With aging and development in the bottle, it can evolve into an even more complex character.
Pairings:
Ideally pairs with seafood, shellfish, shrimp pasta, lobster pasta, fatty and large fish, scallops, white meats, lamb, and goat cooked with herbs, as well as aged cheeses. Serve ideally at 12-14°C.
