Grapes selected from vineyards in the Louros area of Pyrgos Kallistis, at an altitude of 180 to 220 meters. The must was kept in contact with the skins for 12 hours, followed by separation, settling, and fermentation with selected yeasts at 18°C.
Organoleptic Characteristics:
Yellow color with intense golden highlights, subtle notes of noble oxidation, aromas of ripe yellow fruits, and oriental spices. The taste is dynamic with a strong mineral character, distinctive acidity, and a long tannic finish.
Pairings:
Pairs perfectly with seafood, shellfish, shrimp pasta, lobster pasta, fatty and large fish, scallops, white meats, lamb, and goat cooked with herbs and spices. It also complements aged cheeses. Serve at 11°C.
