The second batch of GlenAllachie 21 Year Old Single Malt is a refined whisky blend crafted by Billy Walker, selecting whiskies from eight casks that have matured in the distillery’s warehouses. This release includes casks from 1990 and 1991 that aged in six former Pedro Ximénez and Oloroso Sherry casks, as well as two American oak casks from 1990, which underwent moderate toasting and charring.
The result is a whisky that showcases Walker’s expertise in blending and wood management, offering an exceptionally rich and elegant profile. On the palate, it reveals layers of Seville oranges, coffee beans, dried coconut, and Medjool dates, capturing the complexity and richness imparted by the long maturation in Sherry casks.
