If there is a winemaker who can expertly blend Limnio, Mavroudi, and Mavrotragano to create one of the most elegant Greek red wines, it is Vangelis Gerovassiliou. The resulting Avaton wine confirms this choice, impressing both novices and seasoned wine lovers. With a crisp yet cosmopolitan character, this wine perfectly complements high-quality, well-cooked red meat.
Organoleptic Characteristics:
After extraction and complete alcoholic and malolactic fermentation in special Burgundian wooden tanks, the wine ages for approximately 12 to 18 months in new French oak barrels. It has a bright ruby color and a complex bouquet of spices, ripe black fruits like blackberry, raisins, coffee, and cocoa. On the palate, the soft tannins, supported by abundant fruit, provide strength and balance. The finish is filled with a repeating spiciness. This wine has significant aging potential (15-20 years).
Pairings:
It pairs excellently with veal cooked in red or white sauce. Serve at 16-18 °C.
