Mezcal differs from tequila both in its raw material and cooking method. While tequila is based on blue agave and cooked in ovens, mezcal is made from various agave varieties roasted in underground pits, which gives mezcal its characteristic smoky and earthy flavor.
Clase Azul Mezcal Durango is made from cenizo agave, which grows in northern Mexico, where extreme climatic conditions and drought intensify the plant’s characteristics. The piñas are roasted over firewood and volcanic rocks, enhancing the mezcal’s aromas.
