BioChloe Chatzivariti, the new generation of the eponymous winery, after completing her studies in Greece and abroad and gaining work experience in several winemaking countries around the world, returns to put her signature on the new wines of the winery. Her philosophy revolves around natural winemaking approaches, fully expressed in the trilogy of minimus wines. The minimus is an excellent organic Assyrtiko, where the juice stays with the skins for two days, then ferments with indigenous yeasts in old oak barrels and is bottled without fining or filtration. A wine that will make you fall in love with ‘natural wines.’
Organoleptic Characteristics:
The wine has a medium golden color with some greenish highlights. Its aroma is elegant, with ripe citrus fruits, stone fruits, apple, and honeycomb. The taste is rich with balanced acidity, intense notes of ripe fruits, and a long honeyed aftertaste. Give it some time to breathe after opening before enjoying it.
Pairings:
It pairs perfectly with grilled squid and octopus, grilled fish, lemon lamb, fricassee, and risotto. Serve at 10 – 12°C.
