Northwest of Thessaloniki, in the mountainous region of Goumenissa, the Boutari Winery began its operations in 1984. Goumenissa has been the center of a region famous for its wines for centuries. Since the early years of the Ottoman occupation, the locals have been cultivating the Xinomavro and Negoska grape varieties on the slopes of Mount Paiko and the surrounding low hills. The Boutari estate in Goumenissa is located in the community of Filyria in the prefecture of Kilkis. Here, the Filyria Boutari is produced, a distinguished blend of the two most significant local varieties, Xinomavro and Negoska, made from grapes that are organically cultivated in the estate’s own vineyard.

It pairs excellently with red meat dishes with intense flavors and hard yellow cheeses like Parmesan. It also complements meat dishes accompanied by vegetables and sweet sauces.
