The Akashi whisky is distinguished by its unique production process, as it is the only whisky in the world made by a Toji, a master sake brewer, using sake brewing methods. The smaller fermentation vessel used in this process reduces alcohol levels, allowing Akashi whisky to age less long, while its malt has a smooth and refined texture.
Akashi Red Oak Blended Japanese Whisky ages in bourbon casks and finishes in sherry casks. On the nose, it reveals sweet cereal notes, candied citrus, peaches, and woody spices. On the palate, brown sugar combines with ginger biscuits, milk chocolate, and dried apricots. The finish is long, with vanilla, woodiness, and pepper.
