Mix the ingredients in a small saucepan over low heat. Stir until dissolved, then simmer for 1 minute until smooth and thickened.

- 140 g light brown sugar
- 160 ml water
- 2 tbsp fish sauce
- 1 tbsp lime juice
- 2 red chilies, thinly sliced

Instructions:
Dissolve the sugar in water over low heat, then increase to medium-high. Cook (4–5 minutes) until caramelized. Carefully add fish sauce and lime juice. Allow to cool before using.

- Preheat the oven to 200°C (400°F).
